deTour: Design as One (2022)

About detour

deTour, Hong Kong's largest design festival, has connected the public with local and international design communities through a series of distinctively-themed events since 2004. Returning from 18 November to 4 December with the theme of 'Design as One', curators Chi-wing Lee, Kay Chan Wan Ki and STICKYLINE will transform PMQ into a fun-filled experiment ground for participatory design, welcoming visitors to participate in various design ideas and activities physically and virtually. This edition of deTour will immerse visitors in the topics of living, environment, consumption, society, food and other areas relevant to us all.

For International Collaboration, globally-renowned creative studio Domestic Data Streamers partners with the team at deTour to examine how time can be organised to build memories in their signature whimsical approach. As part of the lineup for Feature Exhibitions, Neighbourhood Innovation Lab turns data into human narratives, telling the stories of the Central community built from data collected from 100 individuals. HKDI Centre for Communication Design invites MOM AND POP to collaborate on an inspiring shopping trip that plays with the connection between product packaging and carbon emission, evoking questions about the real costs of consumption. Meanwhile, food story designer Adelaide Lala Tam extensively documented the life of a cow to respectively understand and infiltrate the cattle industry system. Sound designer Vanissa Law breaks down the structure of language and presents visitors an alternative way to rebuild words. 14 shortlisted ideas from the Open Call will also be featured as Selected Entries, showcasing the creative prowess of the local design community.

Not to be missed are 40 Workshop sessions, 12 Design Dialogues, film screenings and guided tours that promise more fun and engaging ways for visitors to join the conversation and delve deeper into the world of design. Be part of deTour 2022 and make a difference to Design as One!

Design as One

Design isn't just a matter of taste and preferences, but also considers the needs of different people. In an increasingly complex world, can design become a new medium of communication - opening up discussions and inviting wider participation amongst different layers of society?

At deTour 2022, we want to erase the barriers and bring design closer to you, me and everyone - the very 'participants' who contribute to the design process by actively taking part and responding with ideas, opinions and actions. Let your inner voices be our windows to understanding the world better, as we turn your feedback and responses into data to drive design forward. Every little question, every simple change will make a big difference for everyone in this journey!

In this 17-day celebration of design, we welcome every visitor to be involved and interact in the design process, whilst engaging in various thought-provoking issues. Designers, on the other hand, will be our storytellers - connecting different communities; querying, recording and interpreting the vast information gathered. Data from the event will be documented to inspire a variety of design ideas, and even contribute to an ocean of open data with lasting impact on creativity and design, far in the future.

Join us at deTour 2022 as we explore the power of Design as One!

Salted Fish Sauce with Herbs (2017)The Ups and Downs of salted fish industry

With its mild climate, Hong Kong once developed a thriving fishery, which not only formed a major part of the city’s economy but also propelled other industries forward- one of which was salted fish making. While Hong Kong’s Fine harbours and bays allowed easy anchoring of fishing boats, its beaches were ideal locations for sun-drying sea produce – all these geographical advantages contributed to the rise of the salted fish industry in Hong Kong.

The city was known for its sea salt production, too. Owing to the lack of refrigeration equipments in the past, it used to be very difficult to keep catches fresh. Fishermen therefore stored a large amount of sea salt on their boats. The fish were preserved in salt and to be sold in nearby bazaars upon landing. <img width="2176" height="3264" width_o="2176" height_o="3264" data-src="https://freight.cargo.site/t/original/i/28c817a07da06e3bab668b00a63a6b2f6b2f91648dc64c7ba8cf1d0897212641/Photo-25-3-2018--2-56-32-PM.jpg" data-mid="163986466" border="0" src="https://freight.cargo.site/w/1000/i/28c817a07da06e3bab668b00a63a6b2f6b2f91648dc64c7ba8cf1d0897212641/Photo-25-3-2018--2-56-32-PM.jpg" /><img width="1941" height="2912" width_o="1941" height_o="2912" data-src="https://freight.cargo.site/t/original/i/526abe0bc83e542645d81dfffbb3b0e70cc25016859364c4ed8d5c64f4808b11/Photo-25-3-2018--3-04-59-PM.jpg" data-mid="163986485" border="0" data-scale="83" src="https://freight.cargo.site/w/1000/i/526abe0bc83e542645d81dfffbb3b0e70cc25016859364c4ed8d5c64f4808b11/Photo-25-3-2018--3-04-59-PM.jpg" />

In 1977, the most fatal blow to the industry was a research claiming that “slated fish is cancerous”. Then, medical professionals pointed out that eating salted fish could cause cancer in 1986. The news shook the whole industry. In addition, with local catches declining each year, many slated fish businesses folded or else they survived by selling dried seafood.

Nevertheless, the decrease in global catches and the loss of veteran practitioners make the future of the industry uncertain. The lack of professionals is a particularly serious issue, as certain procedures are niche skills. Even insiders regard the industry as “offensive”, (as the pungent smell of salted fish would stink the worker and everywhere he or she goes.) so very few young people want to pursue a career in the field. It is believed that the traditional craft of slated fish making will soon be lost.

	Salted fish sauce with herb
Salted fish was once a household essential in the early days of Hong Kong. However it's not the case anymore now. There are some major reasons why salted fish lose its popularity.

1. &nbsp;&nbsp; Shrinking of family size results in less consumption of preserved food. Salted
fish in particular was once used to serve a regular family of size 6-7. As the
size of family is shrinking to 2-3 members, they no longer have the ability to
consume the whole fish, or they don’t want to keep it in the fridge for such
long time.

2. &nbsp;&nbsp; Longer working hour making less chance to cook and dine at home. Which
also means it's even a rare chance to pick up a salted fish and cook.

3. &nbsp;&nbsp; The affection of western food culture. As different kinds of western
cuisine have blossomed in Hong Kong since the 50s. Hong Kong young people grow
up with eating western food like pasta, burger and fries. Salted fish isn't the
food they actually familiar with.

<img width="2176" height="3264" width_o="2176" height_o="3264" data-src="https://freight.cargo.site/t/original/i/ce4575f74e16d85d412e1c6b7af1769f88c0073155f71745fd53b061a8049b09/Photo-25-3-2018--3-11-00-PM.jpg" data-mid="163986599" border="0" src="https://freight.cargo.site/w/1000/i/ce4575f74e16d85d412e1c6b7af1769f88c0073155f71745fd53b061a8049b09/Photo-25-3-2018--3-11-00-PM.jpg" />

In response, Kay, as a social designer, believes that a good social design are not the empty idea but build in the social context. Those traditions contain local history and identity and, are the key components of community life that bond Hong Kong people together. With the shift in the economic structure, modern lifestyle and shrinking salted fish market, developing a new local product can preserve the local cultural value. In 2015, she developed a Sai Ying Pun themed “Salted Fish Sauce with Herbs” to fit in modern lifestyle nowadays. It is much more convenient for people to cook. The portion of the sauce can fit for the family of 2-3 members so that they do not need to keep the food for so long at home. In order to enhance the flavor and texture, the sauce contains a lot of herbs, pepper and chili which could be good for cooking with pasta and noodles. Today, the salted fish sauce gets a lot of positive feedback. The locals and salted fish industry also support the outcome. Kay believes that the disappearing smell and taste could simulate Hong Kong people’s appetite again.

Cultural Backyard -
Mody Road Garden (2017)

In a city as dense as Hong Kong, public space is no doubt a precious community resource, but just how effective is this asset being used by th public? Trying to answer this question, we have designed a series of colorfu geometrical shaped furniture that placed around Mody Road Garden for people to interact with and organise events around. These new objects wil also be the centerpiece of a campaign that involves a slew of workshops an events to raise public awareness on sustainable living as well as arts an culture. Cultural Backyard is meant to transform public space into a platform for sports and performance enthusiasts to gather and interact.

“The Communal Living Room” -
Yi Pei Square Playground (2018)

Communal Living Room

Yi Pei Square
Due to the densely populated buildings of the surrounding area, Yi Pei Square Playground naturally becomes a gathering space. The activities of the people show a unique sense and feeling of community. For example, the local elderly gathers here every day to talk and to chat; while children and parents pass through after school and often play for a while before going back home.

Design Process
The design process focuses on public participation. We allowed children to propose some park design concepts and collected opinions of the neighbourhood. In doing so, they become an important resource for our park design and provided us with invaluable input, including commenting on the kind of furniture seats they wish to see in the future park.

Public Engagement

The designer team collected opinions through three public engagement sessions, and have established connections with the neighbours. The team has also distributed questionnaires at Yi Pei Square in order to understand specific needs of the residents. Community workshops were held to allow children to participate in park designs; they drew out the parks they had in mind; designed collective games on the playground floor with simple tapes; and came up with their ideal parks with clay, demonstrating their love of games as well as informing the designers of the public’s own ideas. All in all, they will become an important source of inspiration for the park’s design, with some of the park facilities collectively designed as part of an onsite exhibition. The 1:1 prototype as part of the exhibition will also be available for future users to try out.

Final Design
The design aims to use color to connect the ground of the two squares into a "carpet" for play and to provide fun and challenging children's play facilities. The design also intends to utilize nearby trees for shade and to provide ample seating. The park will be more spacious, open and transparent; vibrant and at the same time natural and comfortable. Children will no longer be limited by space and can play in the“ living room” of this community, while other residents simultaneously connect and interact with each other. The process of redesigning the park involves public participation and increased community engagement. It will also be an extension of service to the community in hopes of connecting it even further.

	Mobile Bike Market
Mobile Bike Market is a nomadic market with vendors which change the current business structure into society based structure. It has been held twice a year since 2016. Vendors no longer rent a permanent place, but bike into their own target groups and setup a popup market.

Salted Fish Sauce with Herbs
“Salted Fish Sauce with Herbs” is new local product which is developed to preserve the salted fish industry and food culture in Sai Ying Pun. With the shift in the economic structure, modern lifestyle and shrinking salted fish market, developing the new local product, “Salted Fish Sauce with Herbs” can fit in modern lifestyle nowadays. It is also the key components of community life again that bond Hong Kong people together.

Made of Bamboo
(2018)Kay noticed a common scene of secondhand stools being put on the street in different neighborhoods. These shabby looking stools, however, turn out to be the link gathering people in a community. At a street corner, you will find a group of people sitting on these stools chit-chatting, sharing snacks and tea; or you will see disabled or old people gladly sit on them just to have a rest after a long walk.

When the stools are slightly broken, people repair them in their own creative ways with whatever materials available. This is how she decided the idea of my MADE OF BAMBOO project - to repair these stools on the street with used bamboo sticks, so this kind of unique community environment and culture can be kept.

She wants to demonstrate an easy way to create "Prosthetics for Furniture" so that in the future, people can consider fixing broken furniture themselves before throwing them away.

YES! KIDS CAN School Outreach (2019)By adapting the five-stage practice system of Design Thinking – a methodology of creative problem-solving that includes the steps to ‘Empathize’, ‘Define’, ‘Ideate’, ‘Prototype’, and ‘Test’ – kids will learn to spot problems, generate solutions and finally actualise a design through empathetic and multi-perspective thinking. The process of trial and error to problem-solving will be enriched through teamwork and interpersonal communication.

#Market Community

The markets and bazaars in Causeway Bay serve the daily needs of the neighborhood. The store keepers and shoppers meet each other everyday, but they rarely have time to slow down and social with one another. We therefore design for them a swing chair pavilion for them to chit-chat together while taking their short breaks from the hectic markets.Mentor &amp; TA : Kay Chan, Niki Ng

A home for wild children (2018)As urban development is almost inevitable, so do levelling of hills and land reclamation. In the hustle and bustle of everyday life, city dwellers like us barely recall how we are nurtured by nature.

Once upon a time we were all closely connected with the wilderness. We relied and survived on nature and the resources it provided. We have lost memory of it but it is never too late to awaken.

Let’s be a wild child again.

Revive: Salted Fish (2018)“Revive: Salted Fish” is the first exhibition to reimage the traditional ingredient, salted fish, from a design perspective.
The salted fish was once a meal staple generations ago due to its low price and easy storage. Along with the development of the city, dwellers are now surrounded by an abundant choice of food. This traditional and salty food is gradually losing its popularity and will eventually vanish. This exhibition suggested an alternative way through design and creativity to preserve this traditional food.

Over 20 design and creative products centred on salted fish were created, exploringits potential transformation amidst a modern context in terms of appearance, smell, taste and method of production.

Observing the consumer habit nowadays, the food package plays an important role to attract customers. Apart from designing a nicer package of woven rattan, paper art box, patterned wrapper, considering the new generation might not be familiar with the ingredient, an envelope with recipes printed on help guide its use from head to tail. Featuring the recent laser cut technology, the jigsaw puzzles cut on salted fish is not just a gimmick but a well-considered way for users to have better control over the amount of ingredients while cooking.

The exhibition also challenged the public’s perception about the flavour of salted fish. Instead of Cantonese home-cooked meal, it showcased some newly developed side dishes and by-products such as canned salted fish, salted fish sauce, shredded salted fish, mayonnaise, mead and even fragrance diffuser.

Aside from revitalizing the look and taste of salted fish, a DIY home curing chamber suggested an easy and accessible way for household scale salted fish production.

marketplace. It is an example reflecting design and creativity not only help tighten
relationship between tradition and the ever-changing society but also encourage
imagination over every day objects.

Echo with clouds (2019)Hong Kong is a city of mountains. In the urban setting, hills and mountains are like large reclining chairs that we can sit and rest. Every hike in the mountains is like a journey of discovery ― new destination, new direction, new path, new scenery and new self. Hills and mountains become a place for us to think about life.

Modelled on Robin's Nest, a hill near Sha Tau Kok in the New Territories, Echo with clouds is an outdoor installation developed around hills and clouds. The vibrant and lush forests of Robin's Nest support more than 600 flora and fauna species. The smooth and reflective blocks are stacked up in this art installation to mimik the Robin's Nest, and the colour of the work changes with light to reflect the transience of the clouds. The audience can lie down to enjoy the city skyline, while imagining walking by Robin's Nest under the clouds, listening to the wind and different conversations.
